Ice machines should be given a winter physical
This ice machine blog is spot-on -- if you've ever worked in a kitchen, you know ice machines get neglected and grow mold and fungus. It can be naaaasty, trust me. So restaurant owners should be checking their ice machines now when the ice demand is low. Same is true of your own fridge icemaker or ice trays.
