Rethinking the Meat-Guzzler (New York Times)
This New York Times article does a great job discussing the environmental costs for which meat production is responsible. It explores the increased usage of land and fresh water and the increased carbon dioxide emissions that meat production entails (compared to consuming plants). Even modest reduction in meat consumption can be significant.
